Cooking Mediterranean soup, which is called caccucco in Italy, does not take much time. The recipe for convenience is divided into several stages. First you need to choose the ingredients, then prepare them and start cooking. From kitchen utensils you will need a pot, grater and blender.
The main ingredient is sea fish. If no seabass, cod or salmon were found in the nearest store, you should not replace them with freshwater species. In this case, you get a completely different soup, namely the classic ear. The composition of the dishes also includes various seafood: mussels, shrimp, squid, octopus. However, it is not necessary to use squids and octopuses (after all, many do not like them), but you can not do without mussels and shrimps.
Often the usual first courses are boring so that there is not the slightest desire to dine with them and even cook. In this case, the Mediterranean soup will help out , which attracts more and more people, because it implies interesting combinations of products. It is based on vegetables, fish and aromatic spices. It is prepared much easier than it might seem at first glance. It is only important to choose fresh seafood.
Olive oil you need to choose high-quality in a bottle of dark glass. It should be cold pressed. Many housewives cook a dish only with tomato paste, however, here you also need to pay attention to quality. Nevertheless, it is advisable to take cherry and puree yourself, as Italians try to add fresh tomatoes to almost every dish. Additionally, you need aromatic basil and chili peppers.
Ingredients
Necessarily need a sea cocktail – these are clams, mussels, shrimps, squids. You can choose ready-made or buy each product separately, excluding those that do not like to taste.

- squid, shrimp and mussels – 100 g each;
- fresh tomatoes – 5-7 pcs.;
- fish fillet (salmon, chum) – 150 g;
- red onion – 2 pcs.;
- dry coriander -. tsp;
- water – 0,5 l;
- hard cheese – 100 g;
- olive oil – 3-4 tbsp. l .;
- garlic – a few cloves;
- salt, white pepper, chili – to taste;
- lemon juice – to taste;
- basil – 2-3 branches;

Additionally, several slices of ciabatta may be required to serve the salmon soup nicely . From a bakery product, make croutons in the oven or fry the ciabatta in a pan until crisp.
Preparatory stage
Of course, you should first clean and gut the fish, and also cut it into fillets. Frozen seafood must be thawed in advance, since it takes a lot of time. Cut the squid into strips, fish fillet in small cubes, mussels can be used whole or just pulp. If closed mussels are selected, they will open during cooking, but the sinks will need to be removed.

- add onion and grated tomato to boiling water (or broth), immediately add spices and chopped basil, cook for 15-20 minutes, stirring;
- heat oil in a pan and send finely chopped garlic, as well as white pepper (about ½ teaspoon), fry for 2-3 minutes;
- transfer seafood into a pan and fry over medium heat for 15 minutes, stirring;
- pour a little lemon juice and white wine into the prepared seafood, boil for a couple of minutes;
- chop the tomato mass in a pan with a submersible blender;
- mix seafood with tomato juice and cook for several minutes so that the sea cocktail is saturated with the aroma of filling.
Served Mediterranean fish soup as follows. First, seafood is laid out in a plate and poured with tomato , then sprinkled with grated cheese and basil. You can not boil mussels, shrimps, fish together with tomatoes, but pour tomato broth directly into the plate. Many Italians add ciabatta toasts at will.
Simplified Noodle Soup
Often , seafood soup is made more nutritious by adding rice noodles. You can cook it even faster, and it does not require many sea delicacies.
The following ingredients are needed:
- peeled shrimp – 500 g;
- tiger prawns – 200 g;
- squid – 100 g;
- red fish fillet – 150 g;
- potato – 3 pcs.;
- olive oil – 4-5 tbsp. d .;
- bell pepper (red) – 1 pc.;
- garlic – 3 cloves;
- carrots – 1 pc.;
- tomatoes in their own juice – 250-300 ml;
- rice noodles – 60 g;
- chili pepper – 1 pc.;
- salt, black pepper, Italian spices.
Cooking begins with boiling shrimp and squid in slightly salted water, while the broth does not need to be poured. It is enough to strain and leave for the dish. Sliced carrots in carrots send in warmed olive oil along with chopped garlic and fry for a couple of minutes. You can do this in a saucepan, in which the soup will later be cooked. In it, send chopped bell pepper and chili, fry for another 5-7 minutes.
Peel and cut the potatoes into large slices. Pour a seafood broth into the pan (can be diluted with water if it is not enough) and add potatoes. Boil for about 10 minutes, then shift the tomatoes in their own juice and bring to a boil. Next, pieces of fish fillet are sent to the pan (let it boil for 5-6 minutes), squid and shrimp. Boil everything together for no more than three minutes, otherwise seafood will become stiff.
Separately cook rice noodles according to the instructions. As a rule, you only need to pour it with boiling water and let stand for 3-5 minutes. Add noodles to Mediterranean seafood soup, served with greens and slices of fried bread.
